Fritos Corn Salad

There isn’t one single recipe I make that gets eaten as quickly as this one does. It’s a simple dish to make in a pinch and certainly my go-to dish to bring to a picnic. It’s cold and fresh tasting and completely addicting. I usually serve it with Fritos Scoops as a dip but the chili flavored ones, sprinkled on top is equally tasty. This is a relatively famous recipe on the internet but my alteration aside from the Scoops is that I use Spring Onion. Coupled with the red onion, I feel like it provides a little sweetness to the flavor profile and truly sets this recipe aside from the rest.

Ingredients

  • 2 CANS (30oz total) whole kernel sweet corn, drained

  • 2/3 CUP mayonnaise

  • 1/3 CUP sour cream

  • 1/2 RED ONION, finely diced

  • 2-3 GREEN ONIONS chopped

  • 6 OUNCES cheddar cheese, grated

  • 1 BAG Fritos Scoops or regular Fritos

Instructions

  • Place corn in a large bowl.
  • Stir in mayonnaise and sour cream.
  • Add onion and cheddar cheese and mix well.
  • Just before serving, sprinkle corn chips on top or use scoops to eat.
