Crispy Spicy Tuna

This is my absolute favorite dish to make.  It’s unique, tasty and always a crowd pleaser.  I’ve spent years getting it exactly right, so I hope you enjoy!

Crispy Spicy Tuna

Ingredients

  • Spicy Tuna
  • 1 LB – Sushi-Grade Ahi Tuna

  • 2 TBSP – Sriracha Sauce

  • 1 TBSP – Sesame Oil

  • 1 TSP – Hot Chili Oil

  • 1/4 CUP – Mayonaise

  • 1 TBSP – Chives (finely chopped)

  • White Sesame Seeds

  • Jalapeno Pepper (sliced for garnish)

  • Sushi Rice
  • 1 CUP – Sushi Rice

  • 1 TSP – Sesame Oil

  • 1 1/2 CUP – Water

  • 1 TBSP – Rice Vinegar

  • 1/2 TBSP – Sugar

  • 1/2 TBSP – Kosher Salt

  • Low Sodium Soy Sauce

Instructions

  • Sushi Rice
  • Add sesame oil and rice to a medium pot. Heat on MED-HIGH heat until rice appears slightly toasted.
  • Add Rice Vinegar, Sugar and Kosher salt. Stir to blend.
  • Add water. Allow the rice to come to a boil, reduce to a simmer and cover.
  • Remove from heat once all the liquid has been absorbed.
  • Allow rice to cool for 20 min and form into tightly packed pillows. Drizzle low sodium soy sauce over the pillows.
  • The best way to crisp the rice pillows is to fry them in peanut oil. Heat a pot with about 2″ of peanut oil to 380-400ºF.
  • Drop the pillows in to the hot oil and fry until golden brown.
  • If you don’t want to fry, do this: In a medium frying pan, bring 1/4 cup of Sesame Oil to hot at MED-HIGH heat.
  • Add the pillows to the oil and toast them to a dark brown crisp on both sides.
  • *Drizzle the pillows with soy sauce before browning for extra flavor*
  • Spicy Tuna
  • Mince or finely chop the tuna steaks and put into a small to medium bowl.
  • Add the rest of the ingredients and mix well into a paste.
  • Taste and add extra sriracha to taste.
  • Make The Sushi
  • Allow the rice pillows to cool and spoon the spicy tuna paste onto the tops of each pillow.
  • Sprinkle chives and white sesame seeds over the pillows.

Notes & Prep

  • Allowing the rice pillows to cool will ensure that you don’t start to cook your raw tuna mixture! 🙂
