Ingredients

  • 3-4 Lbs Chuck Roast or English Cut Beef – lots of marbled fat is best

  • 1 Packet Zesty Italian Dressing Mix (Good Seasons)

  • 1 Medium Spanish Onion

  • 8oz Delallo Hot Pepper Rings

  • 8oz Delallo Hot Pepper Rings Juice

  • 1 Beer (dark and hoppy)

  • Salt

  • Pepper

  • Garlic Powder

Instructions

  • The Night Before…
  • Coat the meat with salt, pepper and garlic powder on both sides.  Vacuum seal and refrigerate.
  • The Day Of…
  • Place 1/2 of the Spanish Onion (quartered and separated) on the bottom of the Crock Pot.  Place the meat on top of the onions.  Coat the top of the meat with the italian dressing mix.  Place the other half of the quartered and separated onion on top of the meat.  Add the hot pepper rings on top of the onions and pour the juice overtop of everything.  Add the beer around the edges of the meat until about 3/4 of the meat is submerged in the beer.
  • Cook for 8-10 hours on LOW until meat is extremely tender.  Take meat out of the juice and pull apart into shreds.  Remove any un-rendered fat.  You may choose to remove some of the excess onions if there are too many.

  • It is ideal to make this the day before you plan to serve it so that the flavors have time to marry.
